Mace spice is a dried outer rail, enveloping firmly around the nutmeg kernel. Nutmeg kernel and mace arils indeed are two separate spice products of the same nutmeg fruit. Nutmeg is the seed or ground spice of several species of the genus Myristica.Myristica fragrans (fragrant nutmeg or true nutmeg) is a dark-leaved evergreen tree cultivated for two spices derived from its fruit: nutmeg, from its seed, and mace, from the seed covering.

Mace is known as “Jaypatri / Jaipatri / Javitri” in Hindi, “Japatri” in Telugu and “Jathipathri” in malayalam.

It tastes and smells like a stronger version of nutmeg, and is slightly more bitter. Mace is used to flavour all kinds of foods including baked products, potatoes, cream sauces and sausage. Mace is common in East Indian cooking. In India Mace is used for medical treatments and Indian Garam Masala.

Mace adds a mild nutmeg flavour to soups and sauces as well as sausages, pies and fish dishes. In foods, Mace is used as a spice and flavourings.
Nutmeg and Mace is used for diarrhoea, nausea, stomach spasms and pain, and intestinal gas.
Nutmeg and Mace is applied to the skin to kill pain, especially pain caused by achy joints, mouth sores, and toothache.
In manufacturing, mace oil is used as a fragrance in soaps and cosmetics.
